Bill Jacobs moved to Chicago in 1983. His new home had many new and delicious pizza options, but he struggled to find a thin-crust pizza that pulled his taste buds home to New Haven. Determined to recreate the deliciously crispy, yet chewy pies of his youth. He teamed up with his high school friend, Ray Peck, who comes from the renowned Sally’s Apizza on Wooster Street in New Haven.
After Bill and Ray had their pizza dialed in, they needed a place to call home. Wicker Park in 2001 was not quite the neighborhood we know today. Bill took a chance and converted a classic bowstring truss building from a roofing & construction business to what we all know as Piece today.
In July 2001, the doors opened with a simple menu, but something was missing. Beer. A few months later, all the pesky paperwork was cleared, and the brewing could commence. It only took a year of brewing to gain a few medals at both the Great American Beer Fest and the World Beer Cup. Golden Arm won bronze at both events and is still available on tap today. Piece brews would go on to win 29 medals over the years, solidifying Piece as the most award-winning brew pub in Chicago.
